Scale

Ingredients

  • 3 large avocados
  • 1 large lime
  • 1 jalapeno
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt

Instructions

  1. Cut each avocado in half, scoop out pit and set pit to the side
  2. Cut each avocado with butter knife vertically and then horizontally creating cubes
  3. Scrape cubes into bowl with spoon, this should be roughly 3 cups of avocado.  If using smaller avocados, adjust seasoning as detailed below.
  4. Core and dice jalapeno and add to bowl.  You can also use pickled jalapenos if you prefer.  About 2-3 tablespoons diced would equal a fresh jalapeno.
  5. Juice the lime and add 1 teaspoon of lime juice for every cup of avocado
  6. Add 1/8 teaspoon garlic powder for every cup of avocado
  7. Add 1/8 teaspoon salt for every cup of avocado
  8. Mix and mash with fork to get guacamole to desired consistency
  9. Taste test, and add more of other ingredients to taste, grab a chip and enjoy!

ADDITIONAL NOTES:

SERVING SIZE: I usually estimate 1/4 to 1/3 an avocado per person dependent on how much other food will be served with it. So a party with 20 people you would need about 5-6 avocados.

STORAGE: The best way I’ve found to store guacamole without browning is to put the pits you set aside in the top of the guacamole, and then press plastic wrap directly onto surface of guacamole pushing all air out, and then put lid on bowl as additional barrier. **Make sure to remove pits before serving.

POTLUCKS: If it will be sitting out at a potluck you can add a tablespoon of mayonnaise to the guacamole. It helps preventing browning but it does slightly change the flavor. Serve on bowl of ice to keep fresh longer.

SALT: I usually taste test with the item I intend on eating the guacamole with where possible. If a chip, use less salt in your guacamole, if a tortilla maybe a bit more.

TASTE: My husband told me he actually likes guacamole to be more limey and without the jalapeno. So if you prefer this version, omit the jalapeno and add 2-3 teaspoons of lime for every cup of avocado.
