Surprisingly delicious, this is one of my husband’s favorite dishes served at a local Japanese restaurant. Here’s his recreation of his favorite dish.

Ingredients
- 2 packages of your favorite ramen
- 1 cup mushrooms, sliced
- 1 cup carrot, peeled and chopped
- 1/4 cup cilantro, chopped
- 1/4 cup green onion, chopped
- 1 tablespoon olive oil
- 1 tablespoon soy sauce
- 1 tablespoon garlic, (three cloves), sliced
Instructions
- Prepare ramen according to packaging instructions (you can use the soup base or if trying to limit sodium, throw a teaspoon of soy sauce, and some of your veggies to the water to flavor it up)
- Heat half the oil over medium heat in a large skillet (we like to use cast iron)
- add chopped carrot and mushroom
- drizzle half the soy sauce over the veggies
- cook until carrots are to desired tenderness and veggies have begun to carmelize, 4-5 minutes
- add garlic, green onion, and cilantro and cook for 30 seconds more
- remove veggies from pan and set to side
- add rest of oil to pan
- Ramen should be done now, drain and add to pan
- pour other half of soy sauce over ramen
- stir fry until to desired doneness, usually takes about 2 minutes
- Plate and serve!
