Easy Ramen Stir Fry

Surprisingly delicious, this is one of my husband’s favorite dishes served at a local Japanese restaurant. Here’s his recreation of his favorite dish.

Easy Ramen Stir Fry

Description

If you can make ramen, you can make this simple stir fry recipe.

Ingredients

  • 2 packages of your favorite ramen
  • 1 cup mushrooms, sliced
  • 1 cup carrot, peeled and chopped
  • 1/4 cup cilantro, chopped
  • 1/4 cup green onion, chopped
  • 1 tablespoon olive oil
  • 1 tablespoon soy sauce
  • 1 tablespoon garlic, (three cloves), sliced

Instructions

  1. Prepare ramen according to packaging instructions (you can use the soup base or if trying to limit sodium, throw a teaspoon of soy sauce, and some of your veggies to the water to flavor it up)
  2.  Heat half the oil over medium heat in a large skillet (we like to use cast iron)
  3. add chopped carrot and mushroom
  4. drizzle half the soy sauce over the veggies
  5. cook until carrots are to desired tenderness and veggies have begun to carmelize, 4-5 minutes
  6. add garlic, green onion, and cilantro and cook for 30 seconds more
  7. remove veggies from pan and set to side
  8. add rest of oil to pan
  9. Ramen should be done now, drain and add to pan
  10. pour other half of soy sauce over ramen
  11. stir fry until to desired doneness, usually takes about 2 minutes
  12. Plate and serve!
