Ingredients
- 2 pieces of bread
- 2 teaspoons of butter (I used plant based)
- 2 slices of tomato
- 1/3 cup of spinach
- 2 slices of red onion
- 1/2 cup of egg salad
Instructions
- Butter the bread and toast it lightly
- Slice the tomato and onion into thin slices
- Assemble sandwich by pressing egg salad into one piece of bread lightly with spoon or spatula
- Add tomato, onion, and spinach or your choice of vegetables and enjoy!
