Oh So Easy Egg Salad Sandwich

Ingredients

  • 2 pieces of bread
  • 2 teaspoons of butter (I used plant based)
  • 2 slices of tomato
  • 1/3 cup of spinach
  • 2 slices of red onion
  • 1/2 cup of egg salad

Instructions

  • Butter the bread and toast it lightly
  • Slice the tomato and onion into thin slices
  • Assemble sandwich by pressing egg salad into one piece of bread lightly with spoon or spatula
  • Add tomato, onion, and spinach or your choice of vegetables and enjoy!
