Ingredients
- 8 hard boiled eggs, chopped
- 3 tablespoons mayonnaise (I used vegan mayo)
- 1 tablespoon prepared mustard
- 1 tablespoon pickle relish (you can use sweet or dill, I used dill)
- 1/4 teaspoon paprika
- 1/4 teaspoon salt
- dash of cayenne pepper sprinkled on top (optional)
- Cilantro for garnish (optional)
Instructions
- Gently mix all ingredients in a bowl
- Add any additional ingredients to taste
- Dust lightly with cayenne and add garnish. It’s ready to serve!
