Old-Fashioned Blackberry Cobbler

Ingredients

  • 2 cups sugar
  • 2 cups water
  • 1/2 cup butter
  • 3 cups flour
  • 3 teaspoons of baking powder
  • 3/4 teaspoons of salt
  • 1 cup of shortening
  • 2/3 cup milk
  • 4 cups fresh blackberries
  • 1.5 to 2 teaspoons cinnamon
  • Vegetable oil or cooking spray to grease pan

Instructions

  1. Preheat oven to 350 degrees and grease a 12x9x2 baking dish
  2. Combine sugar and water in saucepan and stir well
  3. Cook sugar water over medium heat, stirring constantly until sugar dissolves, then remove from heat and set aside
  4. Melt butter in microwave and add to baking dish
  5. Cut shortening into flour until mixture resembles course meal
  6. Add milk, stirring just until dry ingredients are mixxed
  7. Scrape down sides of bowl with spatula to make sure all incorporated
  8. Knead dough 4 or 5 times until mixture comes together into a rough ball
  9. Turn dough out onto a lightly floured surface
  10. Roll dough into 12 x 9 rectangle
    • You can cut off those areas larger to fill areas short, slightly moisten joint with water and press together
  11. Spread blackberries over dough longways straight down center
  12. Sprinkle with cinnamon
  13. Roll up jelly roll fashion beginning with long side
  14. Cut dough into 12, 1 inch slices
    • Dental floss pulled opposite directions works great
  15. Place slices cut side down in the melted butter in the baking dish
  16. Pour sugar syrup around slices
  17. Bake at 350 degrees for 55 or 60 minutes until golden brown and toothpick inserted into middle dough comes out clean
