I make these at least once a month. Great with corn bread, rice, or as a side to your favorite dish, it’s an easy classic recipe. Shown with our fresh & easy pico de gallo as garnish.

Description

Tex-Mex style single pot pinto beans.  10-15 minutes of prep, then let it simmer until beans are done.  Easy recipe and delicious every time!

Ingredients

  • 1 pound of dried pinto beans
  • 4 cups of vegetable broth
  • 3 cups of water
  • 1 small onion, diced
  • 2 carrots, peeled and sliced
  • 1 jalapeno, cored and diced
  • 2 bay leaves
  • 3 cloves of garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon of salt
  • 1/2 teaspoon of paprika
  • 1/2 teaspoon of dried chipotle
  • Cilantro, chopped as garnish (optional)
  • 2 tablespoons vegetable or olive oil (optional)

Instructions

  1. Soak beans overnight
  2. Drain in colander and rinse
  3. Add all ingredients to your choice of pot (I usually use crock pot)
    • Crock pot, cover and cook on high for 5 to 6 hours
    • Stove Top, bring to a boil then reduce heat and simmer for 1-2 hours
    • Instant Pot: follow your pot’s instructions
  4. Once beans are tender, taste test, add more seasoning if needed, remove from heat and enjoy!

Notes

I usually omit the carrots if I intend on making refried beans.  You can omit the chipotle, or use smoked paprika instead if you don’t have on hand and it’s just as good.

If you want this with meat, add cooked bacon or diced ham and use chicken stock.
