This is one of the first recipes I learned to make after I moved out on my own, so I feel is appropriate to be the first recipe posted on my website. I’ve modified it over the years to the version below. I hope you enjoy!

Ingredients
For the muffins:
- 2 cups of flour
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1/3 cup of sugar
- 1/4 cup of brown sugar
- 1 large egg
- 1 teaspoon vanilla
- 1/4 cup vegetable oil
- 1 cup milk
- 1.5 cups blueberries
- Fresh, frozen, or canned, then rinsed and drained
- Extra vegetable oil or cooking spray to grease muffin pans
For the Streusel Topping:
- 1/4 cup flour
- 1/4 cup brown sugar
- 1/4 teaspoon cinnamon
- 2 tablespoons butter (plant based butter worked great on these)
Instructions
- Preheat oven to 400 degrees and grease the bottom and sides of 12 muffin cups with vegetable oil or spray
- In large bowl, mix dry ingredients for muffins: flour, salt, baking powder
- In second large bowl, whisk egg briefly, then add remaining muffin ingredients except blueberries (both sugars, vanilla, vegetable oil, and milk)
- Slowly add dry ingredients into wet and stir until just mixed
- Fold in blueberries
- Separate batter evenly among muffin cups (1/3 cup measuring cup works well)
- In dry ingredient bowl, make streusel topping, mix flour, brown sugar and cinnamon. Cut in the butter with fork, knives or pastry blender.
- Divide streusel as muffin topper by sprinkling over batter with spoon
- Bake 20-25 minutes or until toothpick comes out clean
- Let cool about 5 minutes before removing from pan and enjoy!
