I love fresh melon during the summer, but it goes bad quickly and never fails, even as a family of 4 we just can’t get it all eaten. Around day 3 after cutting it, if we still have a lot left, I’ve found it actually makes great popsicles.

Ingredients
- 4 cups of cantaloupe, chopped
- 1 cup of nectarine, chopped
- 1 cup of water
- 2 tablespoons of lemon juice
- 6 tablespoons of sugar
Instructions
- Puree all ingredients to desired consistency
- Pour into popsicle molds
- Freeze for one hour
- Insert popsicle sticks
- freeze for 3-4 more hours or until set
