Ingredients
- 1 pound of dried black beans
- 4 cups of vegetable broth
- 3 cups of water
- 1 small onion, diced
- 1 bell pepper, any color, cored and diced
- 1 jalapeno, cored and diced
- 2 bay leaves
- 3 cloves of garlic, minced
- 1 teaspoon of ground cumin
- 1 teaspoon of dried oregano
- 1/2 teaspoon of salt
- 1/2 teaspoon of paprika
- Cilantro, chopped as garnish (optional)
- 2 tablespoons vegetable or olive oil (optional)
Instructions
- Soak black beans overnight covered in water
- Optional step but reduces cook time and reduces the dreaded oligosaccharides which cause gas
- Drain beans in colander and rinse
- Add all ingredients to crock pot, stove-top pot, or Instant pot
- Crock pot: Cook with lid on for 5-6 hours
- Stove top: saute onion and bell pepper, add remaining ingredients, bring up to boil then reduce heat to low and simmer for 1.5 to 2.5 hours
- Instant pot: use saute option and then follow your instant pots instructions for cook time.
- Check that beans are tender, add additional salt or seasoning as needed and enjoy!
Notes
If you prefer to make this a non-vegan option you can make with chicken broth and add sliced raw sausage or a whole raw chicken breast, once beans are done shred chicken and serve.
