- 4 chicken breasts
- 3 shallots
- bundle of cilantro
- 1 avocado
- 2 plum tomatoes
- 1 jalapeno
- 4 to 5 limes
- tequila
- honey
- vegetable oil
- salt
Tequila Lime Chicken & Marinade
- 2 shallots, peeled and cored, chop in quarters
- 1/4 cup cilantro
- 1/4 cup of tequila
- 1 tablespoon lime zest
- 1/2 cup lime juice
- 3 tablespoons honey
- 2 tablespoons olive oil
- 1 teaspoon salt
- 4 chicken breasts
Avocado Salsa
- 1 avocado, cut into cubes
- 2 plum tomatoes, diced
- 1 shallot, minced
- 1 jalapeno, cored and minced
- 1/2 cup cilantro, chopped
- 1 tablespoon lime juice
- 1/2 teaspoon salt
Instructions
Tequila lime marinade:
- Place shallots, cilantro, tequila, lime zest, lime juice, honey, oil, and salt in food processor
- Pulse until shallots are finally chopped
- Pour the marinade onto the 4 chicken breasts
- Marinate several hours or overnight
Avocado Salsa
- Mix all ingredients and put to marinate in the fridge ideally several hours before serving.
Grill the chicken:
- Preheat grill, clean and oil the grates
- Grill chicken several minutes on each side
- Cook until internal temperature is at least 165 degrees or until chicken is no longer pink
- Pull chicken and let rest before cutting to lock in juices
- Top with avocado salsa
