A light and refreshing chicken option, goes great on a salad or paired with our fresh single pot black beans and/or our simple jasmine rice recipes.

Ingredients

Combined List

  • 4 chicken breasts
  • 3 shallots
  • bundle of cilantro
  • 1 avocado
  • 2 plum tomatoes
  • 1 jalapeno
  • 4 to 5 limes
  • tequila
  • honey
  • vegetable oil
  • salt

Tequila Lime Chicken & Marinade

  • 2 shallots, peeled and cored, chop in quarters
  • 1/4 cup cilantro
  • 1/4 cup of tequila
  • 1 tablespoon lime zest
  • 1/2 cup lime juice
  • 3 tablespoons honey
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 4 chicken breasts

Avocado Salsa

  • 1 avocado, cut into cubes
  • 2 plum tomatoes, diced
  • 1 shallot, minced
  • 1 jalapeno, cored and minced
  • 1/2 cup cilantro, chopped
  • 1 tablespoon lime juice
  • 1/2 teaspoon salt

Instructions

Tequila lime marinade:

  1. Place shallots, cilantro, tequila, lime zest, lime juice, honey, oil, and salt in food processor
  2. Pulse until shallots are finally chopped
  3. Pour the marinade onto the 4 chicken breasts
  4. Marinate several hours or overnight

Avocado Salsa

  • Mix all ingredients and put to marinate in the fridge ideally several hours before serving.

Grill the chicken:

  • Preheat grill, clean and oil the grates
  • Grill chicken several minutes on each side
  • Cook until internal temperature is at least 165 degrees or until chicken is no longer pink
  • Pull chicken and let rest before cutting to lock in juices
  • Top with avocado salsa
