  • 12 bottle of champagne
  • 1 bottle of orange juice
  • 1/2 cup of blackberries
  • 1/2 cup of blueberries
  • 1/2 cup of strawberries
  • 3 tablespoons of sugar
  • 1 tablespoon of lemon juice
  • 6 tablespoons of water
  • Optional garnish (4 blackberries, 4 blueberries, 4 strawberry slices, 4 lemon wedges, 4 orange wedges)

EQUIPMENT:

  • I used an immersion mixer but you could use a blender or food processor

NOTES:

  • My champagne glasses hold about 1/2 cup, so 1/4 cup of champagne and OJ or 59 mL of each
  • Using a 750mL bottle of champagne it works out to about 12 mimosas at roughly 60 mL in each. If you are trying to make 16 or you like extra champagne in yours you’ll definitely need 2 bottles.

Does fresh or frozen fruit work better? Either works for the puree, but the garnish does better with fresh.

What can I do with the leftover puree?

  • Mix it all together and make triple berry mimosas! Same recipe as above, 2 tablespoons of puree, then half orange juice, half champagne. And if you don’t feel like messing with 3 purees, you can do 1/3 of each fruit in the recipe above to start with triple berry mimosas.
  • Make a kid friendly version, substitute champagne in the recipe with sparkling apple cider, 7-Up, Sprite, Squirt, or your favorite sparkling beverage. My 5 year old loves these.
  • Make a berry lemonade, add 1 tablespoon agave or sugar, 1 tablespoon lemon juice per cup of water plus 2 tablespoons puree. Add more of each to taste and this is another kid friendly version.
  • Use it as an ice cream topping
  • Freeze it for later or make berry popsicles!
