When I have bananas that are past their prime, this is my favorite quick and easy banana bread.

Ingredients
- 3 overripe bananas, mashed with fork
- 1/3 cup apple sauce
- 1/2 cup of brown sugar
- 2 teaspoons of vanilla
- 1 tablespoon of oil
- 1 tablespoon of honey
- 2 cups of flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup of chopped walnuts
Topping:
- 2–3 tablespoons brown sugar
Instructions
- Preheat oven to 350 and grease a loaf pan
- Using a piece of parchment paper to line loaf pan works well
- Mix wet ingredients, bananas, apple sauce, honey, oil and vanilla
- Add brown sugar to wet ingredients and mix
- In separate bowl, mix dry ingredients, flour, baking powder, salt
- Mix wet with dry
- Fold in walnuts
- Pour batter into loaf pan
- Sprinkle brown sugar topping on top of batter
- Bake for 1 hour or until tooth pick comes out clean
